- The structure, configuration and conformational behaviour of natural polyphenolics – their physiological, nutritional, and aesthetic effects (e.g. as anti-oxidants and natural colourants) in animal fodder, natural beverages, and plants in general;
- The stereoselective synthesis of polyphenolics and related compounds and their controlled oligomerisation.
