Cook once and eat twice (or more). Making bigger portions and using leftovers for lunch or another dinner saves both money and time.
A good option is a dry bean and samp (or rice) pot. Try out our samp and beans recipe and see how far it can stretch your meals. Why it works without a fridge or lots of space:
- Once cooked, the meal can stay safe for several hours if kept covered in a cool, shaded place.
- It’s filling, affordable, and stretches over more than one meal in a day.
How to stretch it:
- Cook a big pot of beans and samp/rice.
- Eat it plain for one meal, then add a tin of chakalaka, onion and tomato, or soya mince for the next meal to change the taste without extra cost.
